My take on the restaurant of that the chef was taking inspiration from both Italian and Japanese cuisines, but was in no way trying to be an “Italian Restaurant”. I think there’s plenty of room for restaurants to be creative and I personally appreciate it. It’s a big risk to try new things, and not everything will work, but I applaud them for taking that risk.
